Fresh Cheese

Cheese made from pasteurised goats’ milk coagulated using enzymes and with a soft curd, which does not undergo any maturing process.

Its weight varies between 200 and 800 g. and it has hardly any rind.

The curd is white and glossy, with no holes, very moist and soft with a smooth, jellified texture.
